Nébih wrote about the toxic substance: solanine is a toxic substance belonging to the group of glycoalkaloid compounds, these compounds naturally occur in various widely consumed vegetables, potatoes, tomatoes, eggplants and peppers. Symptoms of poisoning at higher glycoalkaloid intakes include a bitter or burning sensation in the mouth and flu-like symptoms such as nausea, vomiting, abdominal cramps, and diarrhea. In more severe cases of glycoalkaloid poisoning, a series of nervous system symptoms may occur (dejection, monotony, restlessness, tremors, confusion, weakness, blurred vision). Green, damaged, rotten/spoiled or sprouting potatoes should be avoided. In Hungary, the maximum permissible solanine content (equivalent) in raw, unpeeled potatoes is 100 milligrams per kilogram. More about the nature of the problem here you can read.
